Operator Profile: Chappell's Coral Grill

Grab your beach blanket and a fork. A trip to the ocean starts at Chappell's Coral Grill in Fort Wayne, Ind., where three generations of diners have gone for the freshest seafood in the Midwest.

“Our menu is 70% seafood from all over the world plus great steaks, chicken, pastas and vegetables,” says Executive Chef Bryan Adams, who started at Chappell’s as a busboy in 1989 when he was a high school student then attended culinary school and became head chef in 1998. “Everything is fresh and prepared on the spot. We make all of our own sauces, hand chop the lettuce, mix our own salad dressings and even make homemade mozzarella using cheese curds. Dining with us is like having a special home-cooked meal with a contemporary twist from a chef.”

Adams is continually experimenting with flavors and food combinations to create innovative new dishes that surprise and delight diners. He recently began using US Foods tandoori naan flatbread to create exciting new specialty pizzas and appetizers.

“The naan is light and crisp, and goes well with our homemade sauces,” Adams says. “One of our new naan creations is roasted garlic olive oil, red sauce, basil and sautéed gulf shrimp topped off with our homemade mozzarella. We also customize it for people who want beef, chicken or vegetarian versions.

“We get many, many compliments on our naan items,” Adams added. “Plus, these are dishes customers can only get at Chappell’s.”

Chappell’s Coral Grill has been a popular Fort Wayne destination since 1985. The restaurant also operates a seafood market at the same location where customers can buy shrimp, salmon, tuna, tilapia and nearly everything else on Chappell’s menu.
Chappell’s has been a US Foods customer for 18 years, and a strong and trusting relationship, Adams says, helps keep his kitchen cooking.

“I’ve had the same salesperson for all those years,” Adams says. “I can call him anytime day or night. If I forget to order tomatoes or heavy cream, I know I’m going to be taken care of – usually within the hour. Plus, I talk with the US Foods regional and district managers all the time because they come in to eat. We all have a really great working relationship.”
